     Sweet Potato Hash with Baked Eggs

Ingredients
300g sweet potatoes, scrubbed and cubed
half a Savoy cabbage, shredded
1 small red onion, sliced
4 medium eggs
1 tbsp soy sauce
 

Instructions
Boil sweet potatoes for 10 mins, cabbage for 2 mins.
Mix potatoes, cabbage, soy sauce, salt & pepper.
Heat 2 tbsp oil in a large frying pan. Fry onion for 1-2 mins. Add potato and cabbage mix and fry, stirring, for a few minutes.
Make four hollows in the mixture and crack an egg into each. Cover with a lid and leave for 8-10 mins until eggs are cooked through.
