     Soup - Pea (large batch; church soup supper)

Ingredients
1 lb dried peas - split or whole
2½ quarts water
3 lbs smoked pork hocks or 1½ lbs ham
2 c diced potatoes
½ tsp pepper
3/4 c chopped onion
1½ stalks celery, chopped fine
 

Instructions
Cover peas with soft water, let stand overnight. Add 2½ qts water, meat, onion, and seasonings. Bring to a boil, cover, reduce heat, simmer 2 hours. Stir occasionally. Remove meat, cut from bone. Return meat to soup, add celery, continue cooking slowly for 45 minutes. Add potatoes and simmer until barely tender, about 20 minutes.
