     Field Greens Spicey Pecan Salad

Ingredients
Vinegrette
2/3 c. sugar 4 1/2 t. onion juice
1 t. dry mustard 2 T. Worcestershire
1 t. salt 1 c. oil
2/3 c. white vinegar
Salad
4 c, mixed field greens
2 green onions, chopped
 
4 oz (1 c.) Feta cheese
1 Granny Smith apple, cored, seeded, chopped
1/4 c. coarsely chopped spicy pecans
Spicey Pecans
2 lg. egg whites 3T. Hungarian Paprika
1 1/2 t. salt 1 1/2 t. cayenne pepper
3/4 c sugar 4 1/2 c pecan halves
2 t. Worcestershire 6 T. unsalted, butter, melted

Instructions
Combine sugar, dry mustard, salt and vinegars; stir until sugar is dissolved. Whisk in onion juice and Worcestershire sauce. Add oil slowly, whisking continuously until blended. Toss greens, green onions, feta cheese, apple and pecans in a salad bowl. Add vinegarette tossing to coat. Pecans Preheat oven to 325. Beat egg whites with salt until foamy. Add sugar, Worcestershire, paprika and cayenne. Fold in pecans and melted, cooled butter. Spread pecans evenly on baking sheet. Bake 30-40 minutes; stirring every 10 minutes. Remove from oven and cool. Store pecans in an airtight container. 4 1/2 c.
