1lb fresh leeks(about3 medium) white and light green parts coarse lay chopped
4oz Mediterranean herb and garlic goat cheese
4 large eggs
1/2tsp salt
1/4tsp ground white or black pepper
1 1/2 cups half and half
Instructions
Prehaet oven to 350 place cookie sheeting oven while oven
preheats.Place pastry dough in deep dish 9 1/2 inch glass or
ceramic pie plate as label directs.
In medium skillet,melt butter over medium heat Add leeks and
cook 8-10 minutes or until tender and golden brown,stirring
occasionally.
Meanwhile in medium bowl with spoon stir together cheese ,1
egg,salt and pepper until smooth and well blended.Add
remaining eggs, 1 at a time and blending between each
addition.Stir in half and half and leeks.Pour leek mixture into
prepared pie crust. Place on preheated cookie sheet in oven
and bake 35-40 minutes or until center puffs and internal
temperature reaches at least 145F. Cool 10 minutes.
Each serving about 360 calories,22g total fat(11 sat fat),170
cholesterol,580 sodium,28 carbohydrates,1g fiber,12g protein.
