     Chicken Enchiladas

Ingredients
4 boneless chicken breasts
12oz sharp cheddar cheese
1/2 cup cilantro chopped
12 corn or flour tortillas
For Enchilada Sauce-
2 T vegetable oil
2 onions minced
1 tsp salt
 
6 T chili powder
6 garlic cloves minced
4 tsp cumin
4 tsp sugar
4 8oz cans tomato sauce
1 cup water

Instructions
Place trimmed chicken breasts in a shallow saucepan and just barely cover highest point with water. Bring water to a boil and boil for 3 minutes. Cover pan, turn off heat, and let set for 30 minutes. After 30 minutes, drain water and shred chicken.
While chicken is cooking, make sauce.
