Ingredients
Dried broad beans
Crushed Garlic
Juice 1 Lemon
Lemon rind
Olive Oil
 

Instructions
• Rinse Some Dried Broad Beans and soak overnight in cold water; • Boil the soaked beans in fresh water until they are soft and break up easily; Strain the beans (saving the water); Mash the beans together with some crushed garlic and freshly chopped green parsley (if the paste seems too thick you can add some of the saved strained water); Stir in some grated lemon rind and lots of olive oil. Add a squeeze of fresh lemon juice.
Serving Suggestions
Serve a mound of Bigilla on a plate, drizzled in olive oil and scattered with parsley.
