     Lamb Shanks

Ingredients
4 Lamb shanks (have the butcher cut them in half).
2 Garlic cloves
2 stalks of celery
Rosemary stalk
1 stubby of dark ale (eg- tooheys old)
Pepper
Oil for browning the lamb
1 Large tin of chopped tomatoes
2 carrots
 

Instructions
Heat oil and fry garlic in a large heavy based pan. In batches, brown the shanks & remove from pan. Add tomatoes, carrots, celery, pepper, rosemary & beer to pan & bring to the boil. Reduce the pan to a simmer, return the shanks and cook slowly until meal falls away from the bone (say 2-3 hours). Season to taste
Serving Suggestions
Serve up with fluffy mashed potatoes & greens.
