     Creamy Chicken & Pumpkin Curry

Ingredients
2 teaspoons sunflower oil
400g skinless chicken breast fillet, cubed
2 cups diced pumpkin
1 packet Continental® Creamy Chicken Curry Recipe Base
3/4 cup (190mL) milk
1 cup (250mL) water
1 cup frozen peas
1 tablespoon toasted slivered almonds
1/2 cup natural yoghurt
 
Rice for serving

Instructions
Heat oil in a large fry pan, add the chicken and pumpkin and brown for 1-2 minutes. Combine the Recipe Base with the milk and water and add the chicken, bring to the boil. Reduce heat and simmer for 15 minutes, or until the chicken is cooked through and the pumpkin is tender. Stir through peas and heat through.
Sprinkle with almonds, top with yoghurt and serve with rice. Stir chopped mint through the yoghurt
Serving Suggestions
Serve with poppadoms and mango chutney
