2 large handfuls baby English spinach leaves, washed and drained
500g frozen pre-cooked prawn cutlets, thawed
Instructions
Bring a pot of salted water to the boil and cook
the pasta according to packet instructions or
until al dente.
Meanwhile, heat the oil in a fry pan and sauté the
onion until soft. Add the garlic and mushrooms and
cook for a further minute before adding the pasta
sauce and spinach leaves. Stir and simmer for 3
minutes.
Add the prawns and heat through.
When cooked, drain the pasta and return it to the
pot. Pour over the prawn mix and stir to combine.
