Ingredients
1 tin condensed milk
3 eggs
1/2 cup shredded coconut
250ml full cream
200 ml milk
1 teaspoon vanilla essence
50 ml brandy (optional)
2 tablespoons sugar
 

Instructions
Put the eggs in a big bowl and whisk thoroughly. Add the tin of condensed milk and all the other ingredients except the sugar which should be used for the caramel making. Make sure all the ingredients are well mixed.
Put the 2 tablespoons sugar in a round baking tin and add a tablespoon of water. Put the baking tin on a cooking ring and rapidly boil the sugar until dark brown in colour and distribute evenly around the whole tin’s surface.
Allow the tin to cool down and then pour the mixture in. Cover the tin with baking foil and put in a preheated oven at 200 F (90 C) for 45 to 50 minutes. Take the tin out of the oven and remove the baking foil, and then return to the oven for another 25 to 30 minutes. Allow to cool and then put in the fridge until ready to serve. Scrape the edge of the tin with a sharp knife and then place the tin of up-side-down on a plate. (Spare me a slice when you serve).
