     Pepparkaker (Swedish Ginger Snaps)

Ingredients
1 c sugar
1/2 c shorteining
1/2 c butter
2 eggs
1/2 c molasses
3 1/2 c flour
2 t baking soda
1 1/2 t ginger
1/2 t cloves
 
1/2 t cinnamon
1/2 t nutmeg
1/4 t salt

Instructions
Mix sugar, shortening, butter, eggs and molasses. Sift together dry ingredients and stir in the sugar mixture. Cover and chill the dough for several hours or overnight. Heat oven to 375 degrees. On a lightly floured board, roll out a small amount of dough about 1/8 inch thick (keep remaining dough in the fridge). Cut the dough with a floured cookie cutter. Palce on an ungreased cookie sheet adn bake 6-8 minutes. Cool and decorate.
These cookies are the traditional Swedish Christmastime favorite. on Sankta Lucia Day (Dec 13) Santkta Lucia, usually a small blond-haired girl adorned ina white robe and a wreath of lights on her hair, serves this to the parents of the house.
Joanne and Rich Longaberger's oldest daughter was an exchange student in Sweden.
