     Peach Cobbler, Ginny's

Ingredients
1 c flour
1 t baking powder
1 egg
dash of salt
1/2 c melted margarine
6 c fresh peaches
1/2 c sugar
3 T tapioca
 

Instructions
Mix flour, baking powder, egg, salt and margarine together with a wooden spoon in small mixing bowl. Pur sliced peaches in bottom of small baking dish. Sprinkle 1/2 c sugar over peaches. Sprinkle tapioca over peaches. The flour mixture will be thick, so spread it over peaches carefully. Bake at 350 degrees 40-50 minutes.
Ginny never sets this on her patio to cool. Jeff lives across the street and his daughters will come over and steal it. It's thta good!
This recipe is also in the Entertaining with Longaberger Celebrating the Seasons Cookbook, with the difference of 2 T tapioca. It also says frozen peaches can be used if defrosted.
