     Pumpkin Bread

Servings   makes 2 loaves

3 c sugar
3 1/2 c flour
1/2 t salt
1 t ground cloves
1 t ground cinnamon
1 t nutmeg
2 t baking soda
4 large eggs
2 c canned pumpkin
1 c vegetable oil
2/3 c water

Preheat oven to 350 degrees. Spray 2 standard loaf pans with Pam. Mix dry ingredients together and set aside. In a separate bowl, combine eggs, pumpkin, oil and water. Slowly add dry ingredients, blending completely. Divide batter equally between prepared pans. Bake 55-60 minutes or until a toothpick comes out clean. Cool loaves, in pans, on wire racks for 10 minutes. Remove from pans and cool completely. Wrap and store.
VARIATION- Add 1 c of your favorite nuts or 1 c chocolate chips before baking.
The perfect treat for an office gathering or a quick gift for the neighbor-you can't go wrong with this Pumpkin Bread. Delicious by itself or topped with cream cheese spread, it's a holiday staple.
