     Basic Breakfast Muffins

Ingredients
2 cups flour
1 tablespoon baking powder
1/4 cup sugar
3/4 teaspoon salt
2 eggs
1 cup milk
1/2 cup canola oil
1 1/2 teaspoons vanilla
 

Instructions
Preheat oven to 400 degrees. Coat a 12-cup muffin oan with cooking spray
In a medium bowl, combine dry ingredients. In a large bowl, beat eggs, milk, oil and vanilla for 1 minute. Add flour mixture. Beat just until combined.
Spoon batter into muffin cups, Bake 18-20 minutes.
Variations- Cinnamon-sugar- Sprinkle muffin tops with cinnamon-sugar Banana-Chocolate chip- Stir in 1 mashed banana and 1/2 cup chocolate chips Lemon-Poppy seed- Substitute 1 tsp lemon extract for vanilla and add 2 Tbsp. poppy seeds
