     Rice Pudding

Ingredients
1 cup water
1 cup rice
1 tsp salt
1 (2 inch) stick cinnamon
1 piece lemon peel
4 cups milk
1 cup sugar
2 egg yolks, slightly beaten
 

Instructions
Bring water to a boil. Add rice, salt, cinnamon and lemon peel. Simmer until water is absorbed. Remove the cinnamon stick and lemon peel. Add sugar and milk; Continue boiling until the mixture is the consistency of custard. Bring to boil. Then simmer about 5 minutes, stirring constantly. Pour into individual cups or a greased mold and chill thoroughly.
Serving Suggestions
Top with whipped cream, nuts or ground cinnamon.
