     German Potato Salad

Ingredients
4 pounds new potatoes
1/2 pound bacon, cut into 1/2 inch pieces
1 large onion, chopped
1 cup cider vinegar (or more to taste)
1 cup water
1 Tbsp flour
2 1/2 Tbsp sugar
2 tsp celery seeds
1/2 tsp pepper
 

Instructions
Boil potatoses until fork tender; drain, cool and peel. Slice thin itno Dutch oven or large baking dish. Fry bacon; remove from pan. Saute onion in grease until golden. Mix flour, sugar, salt and pepper in a medium bowl. Add vinegar and water; Stir until smooth. Stir in onion, bacon and celery seeds. Heat over low heat, stirring until slightly thickened. Pour over potatoes; mix thoroughly. Either store in refrigerator for several days to develop flavor and heat later; OR heat in oven or crock pot right away. Heat at 350 degrees until hot and bubbly.
