     Toscana Soup

Ingredients
2 3/4 c. chicken stock
1/2 c. heavy cream
1 medium Russet potato
2 c. chopped kale (or spinach)
1/2 lb. spicy Italian sausage
1/4 t. salt
1/4 t. crushed red pepper flakes
 

Instructions
Combine the stock and cream in a saucepan over medium heat. Slice the unpeeled potato in 1/2 inch slices, then quarter the slices and add them to the soup. grill or saute the sausage. When cooked and cooled, cut the sausage and add to the soup. Add the kale or spinach. Add the spices and let soup simmer for about an hour, stirring occasionally.
