     White Cheddar Pepper Scones

Ingredients
2 c flour, plus extra for rolling out the dough
1 T bakign powder
1/2 t salt
1 t dry mustard
1 1/2 t freshly cracked black pepper
4 oz sharp white cheddar cheese, grated
3 T unsalted butter, softened
1/4 c minced scallions, white and green parts (4-5 scallions)
1 1/4 c heavy cream plus extra for brushing the tops of the scones
 
2 inch circle cutter

Instructions
Oven to 375 degrees. In large mixing bowl combine flour, bakign powder, salt, dry mustard and pepper. Add the cheese ad butter and rub them into the flour mixture until it has the consistency of coarse crumbs. Add the scallions and cream, mixing lightly just until the dough forms a ball. Press teh dough into a disk. on a lightly floured surface, roll out the dough to a 1/2 inch thickness. use a 2 inch circle cutter to form as many scones as possible, then gently press together the leftover scraps and cut out additional circles. Place on ungreased baking sheet. Brush tops with cream and bake 15-17 minutes or until light golden brown. Transfer to cooling rack. Scones are best eaten the same day they are made. To prepare sandwiches, split each scone in half and fill with a slice of smoked turkey and a slathering of Orange Jalapeno Mustard Sauce or Spicy Plum Sauce (both recipes in cookbook).

His youngest daughter Rachel, recalls how her dad hoasted a big meal at the restaurant each holiday season for the local firefighters and law enforcement officers.
