     Sherry Vinaigrette

Servings   makes 3/4 cup

Ingredients
3 T sherry vinegar (available at specialty food stores or larger supermarkets)
1 large shallot, minced (2 T)
1 t frehs thyme leaves, minced or 1/4 t dried thyme
1 t sugar
2 t dijon mustard
1/2 c extra virgin olive oil
salt and freshly cracked black pepper
 

Instructions
Combine the first 5 ingredients in a mixing bowl. Add oil in a slow stream, whisking continuously until the dressing emulsifies. Season with salt and pepper, to taste. The dressing may be prepared 2-3 days in andvance and refrigerated in an airtight container. Shake or whisk just before serving.
