     Black Bean, Corn and Couscous Salad

Ingredients
1 Can (19 oz) black beans, drained and rinsed
1 - 1 1/2 cups frozen Corn kernels, rinsed
1 medium sweet red pepper, diced
2 green onions, chopped
1/4 cup chopped fresh coriander
2 cups cooked couscous
1/4 cup rice wine vinegar
2 tbsp olive oil
1 tsp Dijon mustard
 
1 clove garlic minced
1/4 tsp each salt and pepper

Instructions
Step 1- All Purpose Vinaigrette In small bowl blend together vinegar, oil, mustard, garlic, salt and pepper.
Step 2- In large bowl combine beans, corn, red peppers, green onions, coriander and cooked couscous.
Add vinaigrette, toss gently until combined and ENJOY!
