1 Can (19 oz) black beans, drained and rinsed
|
|
1 - 1 1/2 cups frozen Corn kernels, rinsed
|
|
1 medium sweet red pepper, diced
|
|
2 green onions, chopped
|
|
1/4 cup chopped fresh coriander
|
|
2 cups cooked couscous
|
|
1/4 cup rice wine vinegar
|
|
2 tbsp olive oil
|
|
1 tsp Dijon mustard
|
|
|
|
1 clove garlic minced
|
|
1/4 tsp each salt and pepper
|
|

Instructions |

|
Step 1-
All Purpose Vinaigrette
In small bowl blend together vinegar, oil, mustard, garlic, salt
and pepper.
|

Step 2-
In large bowl combine beans, corn, red peppers, green onions,
coriander and cooked couscous.
|
|
|
Add vinaigrette, toss gently until combined and ENJOY!
