Filet Mignon Skewers With Balsamic Reduction

Ingredients
-
Sauce:
-
1 cup beef broth
-
3/4 cup balsamic vinegar
-
1/2 cup red wine
-
Kosher salt and ground black pepper
-
For skewers:
-
16 skewers, soaked in water
-
1 1/2 pounds filet mignon or Top Sirloin
 
-
(can sub Chateaubriand or top sirlion)
-
1 red onion, cut into 3/4-inch chunks
-
1 small green pepper, cut into 3/4-inch
-
Kosher salt and ground black pepper
-
2 tablespoons olive oil

Instructions
For sauce: In small saucepan, bring beef broth to a boil. Lower heat, and simmer until reduced by half. Add vinegar and wine, and continue to simmer until reduced to 1/2 cup. Season to taste. Remove from heat and let sit for 20 min. Should be syrupy.
For skewers: Cut bottoms off skewers until they are about 6 inches long. Thread skewers with 4 pieces of steak, alternating onions and pepper. Season generously with salt and pepper and coat with olive oil. Cook on a hot grill for 4 - 5 min.
Alternatively, broil for 6-8 minutes, turning once.
Put two skewers on each plate and drizzle with balsamic syrup.
