     BAKED RICE PUDDING

Ingredients
1 cup of cooked rice
2 1/2 cups of milk
3 large eggs, lightly beaten
3/4 cup of sugar
3/4 cup of raisins
1 teaspoon of vanilla
1/4 teaspoon of salt
1/2 teaspoon of cinnamon
1/4 teaspoon of nutmeg
 

Instructions
Preheat oven to 325. Lightly grease a 9 inch glass baking dish. In a large bowl stir first 7 ingredients. Spoon into baking dish. Place dish in a large pan, pour water 1 inch deep into the pan. Bake for 1 1/2 hours. Combine cinnamon and nutmeg in a small bowl. Sift over top of pudding. Cool slightly and serve.
