     Baked Maple Sweet Potatoes

Ingredients
Potato Ingredients-
4 lb sweet potatoes (5 large potatoes)
1/2 c heavy cream
4 T unsalted butter
1/4 c maple syrup
1/2 t salt
Topping Ingredients-
2 c fresh breadcrumbs (3 slices of bread)
4 T unsalted butter, melted
 
1/2 c light brown sugar
1/2 c coarsely chopped pecans

Instructions
Oven to 400 degrees. Prick potatoes with a fork and place on a foil-lined tray. Roast for 60 minutes or until very tender. Remove teh potatoes from teh oven adn cool slightly. Peel and discard skin. Place in a bowl and add the cream, butter, syrup and salt. Whip until very smooth. Butter a 2 qt casserole and fill with the potato mixture. For the topping, combine all of the ingredients and sprinkle over the potatoes. Bake at 350 degrees for 30 minutes. Check after 20 minutes; cover loosely with foil if the topping browns too quickly.
NOTE- the potaoes may be assembled 1 day in advance. Before baking, bring the casserole out of the fridge for 30 minutes. Cover and bake for 40 minutes at 350 degrees, uncover and bake for an additional 10-15 minutes for a total of 50-55 minutes.
