     Spinach Pie

Ingredients
4 - 10 oz. pkgs. chopped, frozen spinach, thawed
1 lb. feta cheese, crumbled
1 - 8 oz. pkg. cream cheese, softened
1 large onion, chopped
4 eggs
1/2 c. grated romano or parmesan cheese
3 tbsp. olive oil
1 tsp. salt
1/2 tsp. black pepper
 
1 lb. pkg. filo dough
1 lb. butter, melted

Instructions
1. Follow directions on package for thawing filo dough. Squeeze excess juice out of thawed spinach and pat dry on paper towels. (Do not cook or rinse spinach) 2. In large mixing bowl, mix spinach, feta cheese, cream cheese, onion, eggs, grated cheese, olive oil, salt, and pepper.
3. Butter bottom of 15x9 pan. Layer nine sheets of filo dough, brushing each layer with melted butter. Spread spinach filling evenly over filo dough. Top filling with six layers of filo dough, brushing each layer with butter. Tuck edges of dough into pan and brush with additional melted butter. Chill in refrigerator for one hour or overnight. Remove from the refrigerator and using a very sharp knife cur through all layers lengthwise and then diagonally to form diamond - shaped pieces. Bake in preheated 350°F oven for 45-50 minutes or until top layer is golden. Let cool. May be served hot or cold as appetizer or main dish.
