1. Attach mixer blade. Grease an 8 inch shallow
dish. Line base with baking paper. Preheat oven to
Gas 4.
2. Lightly mix eggs in a cup with vanilla extract.
3. Scatter 25g/1oz of the sugar over the base of
the dish and cover with the blackberries.
4. Sift the flour into a mixing bowl. Add
remaining sugar, butter, eggs and milk. Mix on
speed 1 for 20-30 secs then increase the speed
until light and fluffy.
5. Spoon the mixture over the blackberries and
level the surface.
6. Bake for 45-55 mins until risen, golden brown
and firm.
