Preheat your oven to 350 degrees. Line 2 baking sheets with parchment paper and set aside. Cream the butter and sugar together using an electric mixer until pale and fluffy. Add the egg and vanilla and beat until incorporated.

Cream the butter and sugar together using an electric mixer until pale and fluffy. Add the egg and vanilla and beat until incorporated. With the mixer on a low speed, gradually mix in the flour, baking soda, cream of tartar and salt. Chill the dough for half an hour.

Mix the extra sugar and the cinnamon together in a small bowl. Form small tablespoons of the dough into balls, then roll them in the cinnamon-sugar mixture, making sure they are completely coated. Makes 24 cookies.

Bake for about 15 to 18 minutes rotating the baking sheets half way through for even baking. Cool on the baking sheets for a few minutes before transferring onto a wire rack to cool completely.
