     Chicken Enchilada Casserole

Ingredients
1 c chopped onion
2 T oil
1 t each chili powder, garlic powder, ground cumin
8 oz cream cheese
2 lb cooked shredded chicken breasts
3/4 c salsa
8 oz shredded cheddar cheese
1/4 c chopped black olives, optional
1 can enchilada sauce
 
six 7 inch round flour or corn soft tacos (I used tortillas)

Instructions
oven to 350 degrees. In large saucepan cook onions in oil, add spices and then cream cheese over low heat until melted. Add shredded chicken adn salsa. Stir 2-3 minutes until hot. Remove from heat. Stir in 1 1/4 c cheese and black olives. Pour a little enchilada sauce on the bottom of hte Longaberger 2 Qt Covered Casserole dish. Next place 2 soft tacos, 1/2 of the chicken mixture, sprinkle with a little cheese, 2 more soft tacos, remaining chicken, last 2 soft tacos, enchilada sauce adn top with cheese. Bake 20 minutes or until hot and bubbly.
