     Chicken Rice

Ingredients
2 cups long grain rice
1/2 stick margarine
1/4 cup pine nuts
4 cups chicken stock
2 teaspoons salt
1/2 teaspoon pepper
1/2 teaspoon cinnamon
 

Instructions
WE always made this weekly! If you want to use brown rice - remember to allow for longer cooking time - and Mom always told me DON'T PEEK AT THE RICE!
Melt margarine. Saute pine nuts in margarine Add rice and cook on medium for 2 minutes.
Add chicken stock, salt, pepper and cinnamon Stir and bring to a boil.
Turn heat down to medium low and cook covered until water is absorbed. (I still don't know how we know this without PEEKING AT THE RICE!)
