1 lb. cooked chicken

1 can chicken broth (13-3/4 oz.)
|

1 can tomato sauce
|
|
1 package taco seansoning mix
|
|
1 can corn, drained
|

1 red or green pepper cut in small pieces
|
|
1-1/2 dry Minute rice
|
|
Optional- chopped cilantro, onions, sour cream
|

Shredded cheese

Instructions |
|
|
Add chicken, chicken broth, tomato sauce and taco seasoning to pan. Bring to full boil; then simmer, covered, 5 minutes stirring occasionally.

Add corn, peppers and any other options your desire. Bring to full boil.
|
|
|
Stir in rice. Cover, remove from heat. Let stand for 5 minutes. Add cilantro (if desired) and serve with cheese and tortillas
