     Spanish Rice

Ingredients
Green Pepper
Onion
3-4 cloves of garlic
2 tomatoes, cubed
2 cups raw rice
3 3/4 cups boiling water
Season to taste with salt, pepper and oregano
 

Instructions
Heat olive oil. Saute green pepper. Add onion and garlic. Cook until onion is transparent.
Add tomatoes and rice to mixture. Saute until the rice is bright white. Add boiling water, slowly. Season.
Lower heat. Cook uncovered until holes develop. Cover and simmer 20-30 minutes. (Mound rice in center of pan.)
Aunt Dolores was visiting once and asked what she could make us for dinner. I asked for her Spanish Rice because I had it at her home in Brooklyn. She made this in my kitchen and I wrote as she cooked! - Barbara
