Ingredients
1 Pound Ground Beef or Mix of Ground Beef and Ground Pork Sausage
2-4 Cloves Garlic and 1/2 Cup Onion, Finely Minced
6 Ounce Can Tomato Paste Plus Can of Tomato Sauce
1/3 Cup Olive Oil
32 Ounce Can Plum Tomatoes, Cut Up
1 Can Diced Tomatoes
1 Cup Water
2 Beef Bouillon Cubes or 2 Teaspoons of Beef Base
1-2 Teaspoons Each Fresh or Dried Basil and Oregano Plus 1 Bay Leaf
 
1 Tablespoon Sugar
Salt and Pepper to Taste
1 Pound Ricotta Cheese (Can Use Cottage Cheese)
12-16 Ounces of Small Curd Cottage Cheese
10 Ounces Frozen Spinach (Thawed and Drained)
2 Eggs, Lightly Beaten
2 Cups Shredded Mozzarella and 1/2.Cup Parmesan Cheese, Fresh if Possible (Reserve Some for Top)
1/4 Teaspoon Nutmeg and 1/8 Teaspoon Pepper
1 Pound of Lasagna Noodles

Instructions
Sauté the minced garlic and onions in olive oil until they’re just past translucent. Add tomatoes, tomato sauce and tomato paste. Add the pepper, oregano, basil, bay leaf, cup of water, beef base or bouillon and sugar to the tomato sauce.
Brown the burger in a separate pan and incorporated into the sauce. Simmer the sauce until the tomatoes start breaking up a little. While the sauce is simmering you can make the filling. Combine ricotta and/or cottage cheese, eggs, spinach, parmesan cheese, nutmeg and pepper in a large bowl and set aside.
Cook the lasagna noodles per instructions. Lightly spray a cookie sheet or wax paper and lay out the noodles flat. In order to keep the noodles from sticking together you may spray the cooked noodles.
Now to assemble the lasagna- Spray 10 x 14 inch casserole dish lightly with cooking spray. Spread 1/3 of the sauce in the bottom of the dish. Cover the sauce with about 1/3 of the noodles. Cover noodles with 1/2 of the filling and sprinkle with 1/3 of the mozzarella cheese. Repeat the layers once or twice, whichever way works best for you but end with the rest of the sauce. Top lasagna with mozzarella and parmesan and bake at 350 degrees for 45 minutes to an hour. Cover the top with parchment paper if possible while baking.
Serving Suggestions
You can garnish with parmesan, fresh parsley, fresh basil and serve with garlic knots or fresh bread.
