     Ranch Hand Nachos

Ingredients
1 lb small red potatoes with skins on
cooking oil spray
8 oz ground beef or ground turkey
1/2 tsp chili powder
2/3 cup cheddar cheese, shredded (WIC food)
1 cup iceburg lettuce, shredded (WIC food)
1 med tomato, diced (WIC food)
3/4 cup cucumber, peeled and diced (WIC food)
1 Tbsp cilantro, chopped
 
3/4 cup salsa, mild (could make your own with WIC foods)

Instructions
Slice potatoes into small circles. Coat them with cooking oil spray for 3 seconds. Bake in the oven at 450 degrees for 25-30 minutes, depending on desired darkness.
Brown ground beef with chili powder in the pan over medium heat for 8-10 minutes. Remove potatoes from oven and turn off.
Place potatoes on a small oven safe platter or long dish. Top with cheese and beef, put back in oven to melt, about 2 minutes. Remove from oven and top with lettuce, tomato, cucumber, cilantro and salsa.
