     Mexican Dip

Ingredients
1 can white shoe peg corn (WIC food)
1 can pinto beans (WIC food)
1 can black-eyed peas (WIC food)
1 (4oz) jar pimentos, drained and chopped
1 small onion, chopped (WIC food)
1 cup green pepper, chopped (WIC food)
1 cup celery, chopped (WIC food)
1 bag Doritos or Fritos scoops
Dressing-
 
1/4 cup oil
1 cup vinegar (can use apple cider vinegar)
1 cup sugar

Instructions
Mix together corn, beans, peas, pimentos, onion, green pepper and celery.
Dressing- In a saucepan, combine oil, vinegar, and sugar. Bring to boil; stir until sugar is dissolved. Cool dressing to room temperature.
Pour dressing over bean and vegetable mixture. Serve with Doritos or Fritos scoops. This dish can also be served as a bean salad.

Can also be served as a salad
