     Southwestern Chicken Sopa

Ingredients
1/2 stick Butter
1 md Onion; chopped
1/2-1 C Ro-tel tomatoes and green chiles
1 cn Cream of mushroom soup
2 cn Cream chicken soup
1 C Chicken Broth
3 C Cooked chicken or Turkey, cut and shredded
1 lb Cheddar cheese; shredded
1 tsp Garlic
 
1 tsp Cumin
12 Corn Tortillas
1 lb Shredded jack cheese
For Garnish-
Chives and Black Olives

Instructions
Grease a 9X9X2 inch casserole dish. Melt butter in saucepan, then add onions. Cook until tender. Add Ro-tel, garlic, cumin, three soups and turkey or chicken. Place a layer of tortillas on bottom of prepared casserole dish. Add soup mixture, tortillas and cheese on top. Repeat for 3 layers, making sure top layer is cheese. Bake at 350 degrees for 30 minutes to one hour, or until cheese on top is melted. Serves 8 to 10.
Serving Suggestions
Garnish with chives and black olives
