     Yellow Squash Casserole

Ingredients
4 C. sliced yellow squash
1/2 C. chopped onion
35 buttery round crackers, crushed
1 C. shredded chedder cheese
3/4 C. milk ( even if using cream instead of milk)
1/4 C. butter, melted
1 tsp salt
(if available use 2 tsp Pensey's Sandwich Sprinkle, but decrease salt to only 1/4 tsp.)
ground black pepper to taste
 
2 Tbsp butter

Instructions
Preheat oven to 400. Place squash, onion and 1/4 C. butter in skillet. Cook over medium heat until squash starts to soften, 5 minutes. Place in a large bowl. In a medium bowl, mix together crackers and cheese. Stir half of the mixture into the cooked squash and onions. In a small bowl, mix together eggs and milk, then add to squash mixture. Spread Squash into buttered 9 X 13 baking dish. Mix 2 Tbsp melted butter into remaining cracker and cheese mixture. Spread over Squash. Bake for 25 minutes uncovered.
