     Don's Texas Red

Ingredients
3 pounds boneless chuck, 3/8 inch cubes
2 TBS olive oil
3 cloves garlic, minced
2 TBS chili powder
1 TBS Garlic powder
1 TBS Cayenne
2 TBS cumin
3 TBS flour
3 TBS chipotle chile powder
 
1 TBS dry oregano
2 cans beef broth

Instructions
Mix garlic powder, chili powder, cayenne, cumin and flour together and set aside.
Brown beef on medium high in a pot or dutch (lightly brown, approx 2 minutes). Go in batches if needed. Add garlic and lower heat to medium. Sprinkle dry flour mixture over meat and stir to coat. Add oregano and chipotle after flour is coated.
Pour 1 1/2 cans of beef broth over meat and cover. Simmer for 90 minutes. Add salt and pepper, stir in remaining broth and simmer (partially covered) for 30 more minutes.
Best to remove from heat and refrigerate overnight.
Serving Suggestions
Serve with crumbled tortilla chips, cheddar cheese and fresh chopped onions
