     Banana Bread

Servings   1 loaf

Ingredients
1 cup mashed bananas
2 eggs
1/4 cup oil
1 tsp vanilla
1/2 cup sugar (you can reduce to 1/4 cup)
2 tsp cinnamon
1 1/4 cup brown rice flour
1 tsp baking powder
1/2 cup walnut pieces (optional)
 
1/3 cup chocolate chips (optional)

Instructions
Preheat oven to 350F and grease a 4x8 pan.
Mix bananas, eggs, oil and vanilla.
In another bowl, mix together sugar, cinnamon, flour, baking powder. Add to wet ingredients. Fold in walnuts and chocolate chips, if using. Pour into pan.
Bake for 35 minutes and let cool for 10minutes. If using a glass pan, cook an extra 5-10 minutes.
Serving Suggestions
Also makes great muffins.
