     Arroz Con Pollo

Ingredients
1 Whole Fryer or Boneless Skinless Thighs (10)
6 cloves garlic
2 pkgs Sazon (spanish seasoning)
1 tsp. cumin
4 ozs.olive oil
pimentos to garnish
2 tbsp. salt (taste before you add salt)
1 onion
4 bay leaves
 
4 cups rice
1 red pepper(sliced)
1 can tomato sauce 8 0z 0r Stewed Tomatoes
4 cups water
1 can le sueur peas
4 bouillon cubes or chicken base(1/4 cup)

Instructions
Cut chicken or use thighs, fry lightly in olive oil, diced onions and garlic in dutch oven pot. Use a pot that can be put in oven. Add tomatoes,and water, bouillon cubes. Boil 5 minutes. Add bay leaves, salt rice, sazon and red peppers Stir thoroughly and place in oven, 350 degrees for 1 hour Garnish with Le Sueur peas, and red pimentos
Serving Suggestions
Serve with Black Beans, and Plantains
