     West Indies Conch Salad

Ingredients
1 lb conch steak
1 large onion, chopped fine
6 tbsp lime juice
1/4 cup cider or wine vinegar
4 tbsp olive oil
1 1/4 tsp Worcestershire
1/2 tbsp salt
2 red bell peppers, chopped
1 yellow pepper, chopped
 
2 celery ribs, chopped
1/2 cucumber, peeled & chopped remove seeds
4 plum tomatoes, chopped remove seeds
1/4 tsp ground pepper

Instructions
Pound conch and dice into cubes about 1/4 inch on a side. Mix conch, onion, lime juice, vinegar, salad oil and Worcestershire sauce in a bowl. Let stand in refrigerator 3 to 4 hours. Add peppers, celery cucumber, tomatoes, salt and pepper. Mix thoroughly and chill before serving.

Hot Sauce to taste
