     Flour Free Pumpkin Muffins

Ingredients
3 ripe bananas-mashed
2 eggs
1 cup vanilla soy milk
1 teaspoon vanilla
1 tablespoon baking powder
1 teaspoon cinnamon
2 packets Stevia (Equal or Splenda)
1/2 cup raisins
1/2 cup cinnamon chips
 
1 cup chopped walnuts
3 cups rolled oats

Instructions
In large bowl, mash the 3 bananas. Mix in the 2 eggs, vanilla and soy milk until well blended. Add baking powder, cinnamon, and Stevia. Mix well. Add raisins, cinnamon chips an walnuts. Mix well. Stir in the oatmeal until well incorporated.
Spray 12 jumbo muffin pan with cooking spray. Spoon in batter equally into each cup. Cook for 25 minutes at 350 degrees F. Cool slightly before removing from the tins.
