     Virginia Chunk Sweet Pickles

Make a brine of a portion of 2 cup salt to a gallon of water. Boil and pour over pickles boiling hot. Let stand 1 week. Drain and cut into chunks. For the next 3 mornings, make a boiling solution of 1 gallon water, 1 Tbsp alum and pour over pickles boiling hot, make this fresh hot bath for 3 mornings and on the 4th morning heat 6 cups vinegar, 5 cups sugar, 1/3 cup spice, 1 Tbsp celery seed to boiling point and pour over pickles. On the 5th morning, drain this liquid off and add 2 cups of sugar and heat to the boiling point. 6th morning, heat and add 1 cup sugar and seal hot.
