     Chicken Fried Rice

Ingredients
2 Tbsp vegetable oil
2 cups raw chopped chicken breast
2 Tbsp chopped onion (WIC food)
1/2 cup shredded carrots (WIC food)
1/2 cup shredded cabbage (WIC food)
2 cups cooked brown rice (WIC food)
4 eggs, beaten (WIC food)
1/2 cup frozen peas (WIC food)
2 Tbsp soy sauce
 

Instructions
Heat oil in large skillet. Add chicken to the hot oil. Cook chicken until it is no longer pink, stirring often.
Add onions, carrots and cabbage to the skillet. Stir and cook for 2 more minutes.
Add rice, peas and soy sauce to skillet. Stir and cook for 1 more minute.
Pour beaten eggs over mixture in skillet. Stir and cook for about 3 minutes or until eggs are firm and full cooked.
