     Spiced Nut Palmiers

Category   Desserts - Breads
Sub Category   None
Servings   40 cookies

Ingredients
3/4 cup chopped walnuts
2 tbs sugar plus extra for sprinkling
1/2 tsp cinnamon
8 oz puff pastry, thawed if frozen
1 egg, lightly beaten

Instructions
1-Lightly butter two large baking sheets. In a metal food processor, mix nuts sugar and cinnamon until finely ground. 2-Sprinkle work surface with sugar and roll out the puff pastry to a rectangle measuring 20x8 inches and about 1/8 inch thick. Lightly brush egg on pastry and sprinkle evenly with half of the nut mixture. 3- Fold the long edges of the pastry to meet in the center and flatten with the rolling pin. Brush with egg, and most of the remaining nut mixture on top. Fold in the edges to meet in the center; brush with egg and add the rest of the nut mixture. Fold one side of the pastry over the other. 4- Cut the pastry into 3/8 inch slices and place 1 inch apart on baking sheets. 5- Spread the pastry edges apart to form a wedge shape. Chill them in the refrigerator for 15 minutes and preheat the oven to 425 degrees.
6- Bake for about 8-10 minutes. Carefully turn them over halfway through the cooking time, using a metal spatula. Keep a close eye on them as the sugar can easily scorch. Transfer to a wire rack to cool. 7- Enjoy!
