     Mushroom and brie bruschetta

Ingredients
200g/8oz unsalted butter
4 cloves garlic, sliced
4 portobello mushrooms
4 thick slices ciabatta
2 tbsp olive oil
salt and freshly ground black pepper
200g/8oz brie, sliced
2 tsp chopped chives, to garnish
 

Instructions
Preheat the grill to its highest setting.
Melt the butter in a small frying pan. Add the garlic and mushroom and soften for 3 minutes
Heat a griddle pan until smoking. Drizzle the ciabatta with the olive oil and season with salt and freshly ground black pepper. Griddle for 2 minutes on each side
Place the softened mushroom on the ciabatta. Lay the brie over the mushroom and grill for 5 minutes until melted. Sprinkle with chopped chives to serve
