     Whipped Cream

Ingredients
1 Cup Well Chilled Heavy Cream
2 T superfine sugar
 

Instructions
Chill a stainless steel bowl and whisk for 10 minutes
Pour 1 Cup well chilled heavy cream ( 36 to 40% fat ) and 2 T superfine sugar into the bowl. Whisk by hand, reversing direction every few turns and making sure to hit all sides of the bowl, until soft peaks form, about 2 minutes. Do not over mix.
