2 cups cooked smoked ham (1/4 inch dice) - prosciutto
2 cups fresh dried bread crumbs
Instructions
Preheat oven to 375 degrees. Cook the macaroni in
well-salted water and drain, set aside.
Cheese Sauce- Start with 1/4 cup of melted butter
in large saucier pan and medium. Add 1/4 cup flour
and stir to combine until it froths and foams.
Should have a slightly nutty aroma and have some
light coloring. Whisk in the milk until smooth,
then add cayenne and salt. Simmer on very low for
2 minutes. Pour into a large mixing bowl
Stir in most of the cheese, about 3/4 cups each
along with the ham and onion. Stir thoroughly
allowing the cheese to melt into the sauce. Mix in
your macaroni.
Pour the mixture into a buttered 9 x 13 dish
Mix remaining cheese with the breadcrumbs and
remaining melted butter. Layer onto the top of the
casserole dish evenly. Cook, uncovered in the oven
for 30-40 minutes.
OPTIONS- You can substitute any cheese or other
filler. Ideas include andouille sausage, cooked
bacon, spanish chorizo for ham. Or fontina,muenster,
emmenthaler, gruyere, monterey jack.
