     Red Cinnamon Pickles

Ingredients
2 gallons peaked pickles take out the seeds
2 cups dehydrated lime
8 1/2 quarts water
1 cup vinegar
1 small bottle of red food coloring
1 tablespoon alumn
2 cups vinegar
2 cups water
1 pkg red hots
 
10 cups sugar
4 to 8 sticks cinnamon

Instructions
Peel a d take seed out of pickles then slice in 1 inch slices. Soak in dehydrated lime and water stir good, let set for 24 hours. Drain and wash pickles in cold water. Let sit in cold water for 3 hours. Drain and put pickles in kettle then add vinegar, bottle of food coloring, alum and enough water to cover pickles ad simmer or 2 hours. Drain pickles and put in crock, then add to drained mixture 2 c vinegar, 2 cups water, red hots, 10 cups sugar and cinnamon sticks, then bring to boil and pour over pickles in crock and add enough water to cover pickles. Let stand overnight. Drain syrup off pickles and heat, then pour over pickles and do this for 3 mornings. On 4th morning heat both pickles and syrup together, bring to boil, then put in jars and seal.
