     Southwest Corn Casserole

Ingredients
2 Cans Creamed Corn
3 Eggs, beaten
¼ Pound Cheddar Cheese (grated)
2-5 Green Chile Peppers (chopped)
5 Green Onions (chopped)
½ Teaspoon Salt
½ Teaspoon Sugar
A Few Handfull Tortilla Chips (crushed up for topping of the casserole)
 

Instructions
Beat eggs fairly well. Mix all of the ingredients (except the tortilla chips) together in a mixing bowl.
Spray a casserole dish with non stick spray. Pour the mixture into the casserole dish. Bake at 350 degrees for 15 minutes.
Top with crushed tortilla chips. Lightly cover with foil. Bake for another 15 minutes. Insert knife in the center when it comes out clean casserole is done.
Garnish with more grated cheese and chopped green onions.
Serving Suggestions
New Mexico Hatch Chiles are the best, but any Anaheim chile will work
