     Tex mex chicken melts

Ingredients
1 loaf of french bread sliced thin
1 can (10 oz) chunk white chicken, drained and flaked
1/2 cup finely chopped onion
1/2 cup finely diced green bell pepper
1 cup shredded cheddar cheese
1/4 cup mayonaise
1 garlic clove, pressed
1 tbs southwestern seasoning
1/4 tsp salt
 
2 plum tomatoes, sliced
fresh cilantro for topping

Instructions
slice bread. arrange on baking dish. mix chicken, onion, bell pepper, 1/2 cup cheese, mayonaise, garlic, seasoning mix, and salt.
scoop small amount of chicken mixture onto each slice of bread. top each with one slice of tomato. sprinkle with remaining cheese. bake 15-18 minutes on 350 or until edges of bread are golden brown and cheese is melted. remove from oven and top with cilantro.
