     Snickerdoodles

Ingredients
1 cup shortening
1 1/2 cup sugar
2 eggs
2 3/4 cups sifted flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
 

Instructions
HEAT oven to 400 degrees
Mix shortening, sugar, and eggs. Sift remaining ingredients together and stir into previous mixture.
Roll into balls the size of small walnuts. Roll each ball in mixture of 2 tablespoons of sugar and 2 tablespoons of cinnamon.
Place 2" apart on ungreased cookie sheet. Bake 8-10 minutes or until lightly browned but still soft. Note: cookies puff up first, then faltten out. Note: It is preferable to under bake these cookies than to overbake.
